chunks / chips (280 grams by weight)
Instructions
Preheat the oven to 350 degrees Fahrenheit
While the oven is heating, line a cookie sheet with parchment paper
Mix butter, monk fruit sweetener, and brown sugar in a medium bowl
Stir in the eggs and vanilla extract
In a separate bowl combine almond flour, baking soda, baking powder, protein powder, salt and cinnamon
Mix in the oats
Fold in the dark chocolate
Cover and refrigerate for 1 hour
Using an ice cream scooper*, scoop out dough and place on baking sheet. (at least 2 inches apart)
Cook in oven for 8-10 minutes
Remove and allow to cool in pan for 5 minutes
Transfer to cooling rack, and let cookies cool completely before serving
Notes
*if you do not have an ice cream scooper, you can form golfball sized balls of dough
