rendered, bit-size
Instructions
wash and dry 4 heads of fresh broccoli
Break down broccoli florets into single pieces, and add to a mixing bowl
In a separate bowl, Add in 3/4 cup of mayonnaise, 1/4 cup of sour cream, and 1 & 1/2 tablespoons of white wine vinegar
Then add in 3 tablespoons of monk fruit sweetener, 1 tablespoon of olive oil, 1/2 teaspoon of sea salt, and 1/4 teaspoon of pepper.
Mix well and pour evenly over broccoli
Place the bowl in the fridge
chop 6 slices of bacon into bacon bit-sized pieces and add to a cold pan
Cook over medium heat until fully rendered (look for bubbles to form around the edges of the bacon)
Remove bacon and set aside
Finely dice 1/2 of a red onion
Remove broccoli from the fridge and fold in bacon, red onion, and 1/2 cup each of sunflower seeds, raisons, and cheddar cheese
return to the fridge and let it chill for at least 1 hour before serving
