I first heard about Allulose while following the Keto diet. I was eating no sugar and very little carbs. In an attempt to cure my sweet tooth without compromising my keto diet, I turned to keto friendly sugar alternatives. There are plenty of keto friendly, low or no carb sugar alternatives these days, but none that can produce a simple syrup comparable to sugar like Allulose does.

While it is certainly great for keto, allulose is also a great sugar substitute for those struggling with obesity or diabetes. The reason for this is that allulose is very low in calories, which can help aid in weight loss and has little effect on blood sugar, so is great for anyone dealing with diabetes.

Among the more popular table sugar (sucrose) alternatives there are quite a few:

  • Stevia
  • Monk Fruit
  • Erythritol & Xylitol
  • Sucralose (Splenda)

Allulose is the only sweeter (other than sucrose), that maintains the correct consistency needed to produce a simple syrup. This is because allulose is actually classified as a rare sugar , and not a sugar substitute. Allulose is naturally found in maple syrup, figs, and raisins. Because of this, it has a similar chemical structure to sugar, but at only 1/10th the calories! This makes allulose a great keto candidate for all recipes that require sugar.

Tips for making Pumpkin Spice Syrup

To make pumpkin spice syrup, you will need to make a simple syrup. Simple syrup is made through a process of heating sugar in boiling water (while continually stirring) until the water evaporates and forms a syrup. All other sugar alternatives I have tried to do this with will crystalize when put into the fridge (think rock candy), which causes a bit of a problem when trying to make syrup.

This is where Allulose comes in clutch! Because Allulose shares a similar structure to sucrose, it is able to produce a perfect simple syrup at a fraction of the calories compared to table sugar. Making Pumpkin Spice Syrup with Allulose sweetener is stupid easy!

  • Simply combine filtered water, Allulose, and spices into a saucepan
  • Bring to boil
  • and stir continually (around 10-15 minutes)

For me it took about 15 minutes to reach the preferred syrup consistency, but that can vary. Just keep stirring the boiling water until the mixture completely coats the back of a spoon. Then remove, let cool, and transfer to an airtight proof container which can be kept in the fridge for up to two weeks.

How to Enjoy Pumpkin Spice Syrup

I love to enjoy this Pumpkin Spice Syrup with some almond milk in my home-made Cold Brew Coffee recipe, or added to some frothed oat milk on top of a steamy cappuccino. It is also great stirred straight into a hot cup of coffee or tea!

The consistency straight out of the fridge will be rather thick, it is a syrup after all! What I like to do is get a spoonful of the Pumpkin Spice Syrup and let it come to room temperature, that way I can then blend it into my drink with no problem. You can also add to some milk and use a handheld milk frother to combine before adding to your coffee or tea.

Ingredients
  

  • 1 cup water filtered
  • 1 cup allulose
  • 1 tsp nutmeg ground
  • 1 tsp cinnamon ground
  • 1 tsp cloves ground
  • 1 tsp all spice ground
  • 1 tsp ginger ground
  • ½ tsp vanilla extract

Instructions
 

  • Add all ingredients into saucepan
  • Bring to boil, stirring continually
  • Boil and continue to stir
  • Remove from heat once syrup coats back of tablespoon completely.

Notes

Keep stirring while boiling as that will keep the sugar from burning. Took me about 15 minutes before syrup consistency formed.
