Keto Lemon Blueberry Bread is the ultimate guilt free breakfast treat. The tangy fresh squeezed lemon helps kickstart any morning. Then, pair the natural sweetness of the blueberries, with the tart lemon cream glaze, and you know you are starting your day off on the right track!

What makes it Keto?

Almond Flour:

Almond flour contains less carbohydrates, less processed sugar, and more healthy fats than wheat flour. It is also gluten free, and provides plenty of prebiotic dietary fiber. That means that almond flour can aid in weight loss!

With all of the numerous pros to baking with almond flour, it is obvious why this is a great healthy alternative to wheat flour. But of course, with every pro there are bound to be a some cons.

The main con being that baking with almond flour is not always as straight forward as a 1-for-1 substitution with wheat flour. This is due to the fact that almond flour contains more oils than wheat flour. It is a nut after all!

In this recipe, we use a little coconut flour to help soak up some of the oil contained in the almond flour. This helps to create a better textured loaf.

Monk Fruit:

Monk fruit is a low glycemic, zero calorie, all natural sugar substitute. Because of this, it is a great candidate for the Keto diet.

Baking with monk fruit is simple, as it is a direct 1 for 1 substitute for sugar. This means there is no guess work when baking. Thanks for keeping it simple, Monk Fruit!

Also, unlike most sweeteners, monk fruit will not cause a spike in blood sugar levels. There are even some studies illustrating that it can help to lower blood sugar levels.

Lemons contain a large amount of vitamins and antioxidants. The juice is rich with vitamins that help promote immune system response. Because of this, it can help to reduce risk of disease.

Lemons, like monk fruit, also contain high levels of dietary fiber. Because the pulp is high in soluble fiber, it helps you feel full faster. This is especially important in weigh management and heart health.

How to Bake Keto Lemon Blueberry Bread

Preparing the Dough

Always weigh your ingredients:

You will have much more success in baking if you weigh out your ingredients. I learned this lesson the hard way!

The reason weighing is beneficial is because everyone measures a cup of flour differently. Do you use the scoop and level technique? Or do you pack in as much as possible up to the cup line? Or even worse, do you eyeball it?

Baking is more science than feel. When a recipe calls for a cup of flour. It works best with a cup of flour. Unlike with cooking (where improvising can often improve the meal) baking is an exact science. To make things more exact, use a digital scale!

Preparing the Ingredients

You will have much more success in baking if you weigh out the ingredients!

Dry ingredients:

  • 1 and 1/2 cups of blanched almond flour (180 grams by weight).
  • Half cup of coconut flour (50 grams by weight).
  • 1 teaspoon of baking powder.
  • 1 teaspoon of salt.

Wet ingredients:

  • 1 cup of monk fruit sweetener.
  • 1 teaspoon of vanilla.
  • 4 eggs.
  • 2 tablespoons of melted butter (unsalted).
  • 2 tablespoons of freshly squeezed lemon juice.
  • Zest of 1 lemon
  • 3/4 cups of whole milk

Baking Keto Lemon Blueberry Bread

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. While the oven is heating, line a 5 inch by 9 inch bread pan with parchment paper.
  3. Then, weigh or measure out dry ingredients.
  4. Combine the dry ingredients in a bowl and set aside.
  5. Next, weigh or measure out the wet ingredients.
  6. Combine all wet ingredients (except the milk) in a mixing bowl.
  7. While mixing (with hand or stand mixer), alternate adding in dry ingredients and milk.
  8. Once fully incorporated, transfer to the bread pan.
  9. Bake at 325 degrees for 100 minutes (1 hour and 40 minutes.)
  10. Remove from oven, and allow to cool in pan for 5 minutes.
  11. Then, transfer to cooling rack.
  12. Finally, slice and store in air tight container for 3-5 days.

The key to making Keto Lemon Blueberry Bread is to be exact as possible. This is done by using a digital food scale to weigh out your ingredients. There are hundreds of cheap digital food scales that will work great. Just be sure that is measures to the gram.

In order to mix the ingredients, you will need either a stand or hand mixer. You can’t go wrong with this Kitchen-aid Artisan Stand Mixer. But a hand mixer will also work just fine for this recipe.

You will also need a lemon zester for this recipe. I used this handheld OXO good grips lemon zester purchased through Amazon. Made the zesting process super easy!

  • Preheat the oven to 325 degrees Fahrenheit
