This delicious dish includes a super easy hack for making tasty, juicy and perfectly cooked white fish every time! I use crumbled up Ritz Crackers as the breading, but you are fine to use Panko or breadcrumbs in this recipe too!
My favorite tip for making perfect breaded white fish every time, is to use mayonnaise as an emulsifier. Spreading a thick layer of mayo before baking helps to protect the meat from overcooking, while also adding a pleasant tang and texture to the meal.
For this particular bake, I used some frozen Cod that I had in the deep freezer, but really can use any type of white fish including Tilapia (a favorite of mine). Tilapia is a firm-fleshed white fish that is most frequently farm-raised. … Tilapia is usually relatively in-expensive, and has a neutral taste, so it can be paired with a variety of sauces or marinades. It is low-carb, high in omega-3 fatty acids, and is considered an excellent source of low-fat protein.
Ingredients
- 2 fillets Tilapia / White Fish
- 1 cup mayonnaise
- 1 cup Rits crackers/ Panko
- 1/2 cup parmesan cheese
- 1/2 tbsp hot sauce
- 1 tsp parsley
- Salt and pepper to taste
Wash and pat dry Tilapia fillets. Combine mayo, cheese, hot sauce in one bowl and set aside. Combine crumbled crackers (breadcrumbs), parsley, and salt / pepper in a shallow dish. Spread mayo mixture evenly over fillets. Roll in breadcrumb mixture. Place fillets on air fryer wire rack, and cook at 400 degrees for 12-15 minutes.

Wash and pat dry fillets.

Combine mayo, cheese, hot sauce in one bowl and set aside.

Combine crumbled crackers (breadcrumbs), parsley, and salt / pepper in a shallow dish, set aside.
Step 4
Spread mayo mixture evenly over fillets & roll in breadcrumb mixture.
Step 5
Place fillets on air fryer wire rack, and cook at 400 degrees for 12-15 minutes.
